Delicious, easy-to-make, healthy, and affordable lentil rice recipe

This lentil rice recipe helped me transition from being prediabetic to having normal blood sugar levels.

About 4 years ago, I was diagnosed as prediabetic. At that time, I had no idea what ‘diabetic’ meant. After some research, I discovered that it’s essentially caused by what I eat. Back then, my breakfast consisted of a lot of pancakes with syrup, which made me feel very sleepy and short of breath. I later learned that this was due to my blood sugar spiking quickly, and my body struggling to control insulin levels.

I decided to change my diet, and although it took some time, eventually my blood sugar levels normalized. To achieve this, I cooked a lot of Mediterranean-inspired dishes. That’s when I discovered lentils. Lentils are rich in protein, high in fiber, and nutrient-rich, making them excellent for controlling blood sugar. Not only that, they’re quite affordable and surprisingly delicious.

I primarily used lentils in salads or rice dishes. They’re easy to cook and have become a staple in my kitchen. If you’re looking for a nutritious and budget-friendly option to help manage blood sugar levels, I highly recommend trying lentil rice.

 

Ingredients serving 3 people:

I highly recommend the Staub Braiser. It lasts forever and helps create healthy, tasty dishes. It’s versatile for braising and baking in the oven. Highly convenient for various cooking needs.

Instructions:

  1. Soak the lentils one day before cooking. I’ve found that some green lentils are okay after just a few hours, but in general, green lentils take longer to soften.
  2. Grate the garlic and ginger.
  3. Rinse the rice.
  4. Cut the red onions and cherry tomatoes.
  5. Heat olive oil in a pan over medium heat. Once the pan is hot, add the onions and salt, and sauté. Then, add the lentils along with the grated ginger and garlic, followed by the cherry tomatoes. Add seasonings such as chicken bouillon, coriander, dried oregano, and paprika. Next, add the rice and sauté briefly. Pour in water, reduce the heat to low, cover with a lid, and simmer for 20 minutes.
  6. Remove the lid, stir, and squeeze lemon juice over the dish. Enjoy this delicious and healthy lentil rice!

I am a big fan of Staub, but I also use the Le Creuset rice cooker. Both are excellent brands. Some prefer Staub, while others prefer Le Creuset. Although there are many cheaper imitations available, I don’t recommend them because Staub and Le Creuset products last longer and maintain their quality.
