Japanese-Vietnamese Fusion Vermicelli Rice Noodles

A healthy and satisfying food with plenty of vegetables, reminiscent of salad noodles.

Have you ever tried Vietnamese Noodle Bowls (Bun Thit Nuong Cha Gio)? This popular Vietnamese dish translates to ‘Grilled Pork Vermicelli Noodle Bowls with Spring Rolls’ in English. It features grilled marinated pork (Bun Thit Nuong), vermicelli noodles, fresh herbs, vegetables, and spring rolls (Cha Gio). It offers a refreshing and light flavor, perfect if you’ve indulged a bit too much during the holiday season. Inspired by my Vietnamese friend’s cooking, I’ve put a Japanese twist on the recipe using vermicelli rice noodles. Feel free to add your favorite vegetables; it’s simple and delicious. Instructions:

  1. Grate garlic and ginger, then marinate the beef with sugar, sake, and soy sauce for at least 30 minutes. It can also be marinated overnight.

  2. Slice the onion (amount according to preference; not too much is necessary, and it’s okay to skip if you don’t like onions).

  3. In a pot, add water, heat it, and add sugar, vinegar, fish sauce, and crushed garlic. Once it boils, turn off the heat and add the sliced onions.

  4. Cut your favorite vegetables.

  5. Heat a frying pan, add oil (use sesame oil or your preferred oil), and cook the marinated meat.

  6. Meanwhile, boil the noodles according to the instructions. (For rice noodles, be sure to stir constantly to prevent sticking to the bottom of the pot.) Once the noodles are cooked, rinse them well under running water until they become transparent.

  7. In a bowl, place the noodles and top with vegetables and meat. Pour the sauce over it, and it’s ready to serve.
