I have a passion for both Thai and Japanese cuisine, so I often experiment by combining Thai and Japanese seasonings in my cooking. The result is a delightful blend of flavors that I find absolutely delicious. This recipe has hints of teriyaki chicken flavor infused with the aromatic essence of Thai basil. It’s simple to prepare – just marinate the chicken, stir-fry with your favorite vegetables, and voila! The addition of ginger and garlic adds an extra layer of yumminess. Ingredients:
Chicken, 630g, marinated with 1 tablespoon each of soy sauce, sake, mirin, sugar, and soy sauce koji

- Onion
- Mushroom
- Hoisin Sauce
- Soy Sauce
- Sugar
- Mirin
The amount of seasoning varies depending on the quantity of vegetables added. Start with one tablespoon of each initially, then adjust the flavor according to your preference.

Instructions:
- Place garlic, ginger, and chili pepper in a granite mortar and pestle, then crush them.
- Cut your preferred vegetables into bite-sized pieces.
- Trim the fat off the chicken thighs and lightly pound both sides with a knife. Cut them into small chunks, then marinate with hoisin sauce or oyster sauce, soy sauce, sake, sugar, mirin, and optional soy sauce koji or miso. - Heat oil in a wok or frying pan over medium heat. Once hot, add grated ginger, garlic, chili pepper and chicken, then stir-fry until the chicken is cooked through. Once cooked, remove the chicken from the pan.
- In the same pan, add more oil if needed and stir-fry the vegetables. Season with hoisin sauce, soy sauce, sugar, mirin, adjusting the amounts to taste. Once lightly mixed, add the cooked chicken back into the pan and continue stir-frying until the vegetables and chicken are cooked through. Once everything is cooked, turn off the heat, add basil, and mix well to finish.
- Optionally, serve with a fried egg for extra flavor.
