Many households typically opt for the convenience of pancake mix, simply adding eggs and milk before mixing and cooking. My pancake recipe embraces this simplicity, relying on Costco’s pancake mix, eggs, and water as its foundational ingredients. What’s the secret behind their extraordinary fluffiness? A touch of yogurt, seamlessly blended into the batter. Despite being just pancakes, a slight change in the method and the addition of yogurt can result in pancakes even more delicious than those from a restaurant, using the same ingredients. It’s a recipe you can prepare the batter for in the evening and simply cook in the morning. You can make a large batch and freeze them, and they’ll remain fluffy. I often freeze them and, on occasions like early morning soccer games, I thaw the pancakes and serve them in the car. With a handful of culinary tips and a specific batter preparation sequence, you can have these pancakes ready in just 5 minutes. Allowing the batter to rest for approximately 15 minutes before cooking results in pancakes that are not only wonderfully fluffy but also delightfully thick. And here’s the best part: You won’t need any oil, thanks to the magic of a Teflon frying pan, making cleanup an absolute breeze. In fact, I’ve served these pancakes to my neighbors, and they said it was the best pancake they had ever tasted!
Ingredients:
- 1cup Pancake Mix
- 2 Eggs
- 80ml Water
- 1/3 Cup PlainYogurt
- 10-15g Butter
Instructions:
- Separate the egg whites from the egg yolks. Whip the egg whites with a hand mixer until stiff peaks form. Some might find using a hand mixer a bit cumbersome, but it takes only 1 or 2 minutes with the mixer, making it more convenient and a time-saver.
- Incorporate the egg yolks into the whipped egg whites, folding gently to avoid deflating the meringue.
- Add the yogurt and mix it into the batter.
- Incorporate the pancake mix and stir until well combined. Once mixed, let the batter sit for about 15 minutes.
- Heat a large Teflon frying pan over medium heat without adding oil and warm it for about 1 minute.
- Once the frying pan is hot, pour about one ladleful of pancake mix batter and make two or three pancakes, depending on how big your frying pan is.
- When the pancake batter starts to bubble, it’s a sign that the batter is cooking, so flip the pancakes.
- While the other side of the pancakes is cooking, place a small piece of butter on top of each pancake and let it melt and spread evenly. Adding the butter while the pancakes are still hot allows it to soak into the batter, making it more delicious.
- Once both sides are cooked, remove them onto a plate, drizzle with syrup, and they’re ready to serve.
