Kid-Friendly Crunchy Green Beans: The Snack That Makes Veggies Fun!

Have you ever thought about how to get your kids to eat more vegetables? When I was a child, I didn’t like most vegetables. My mom was such a creative person; she tried sneaking many vegetables into my favorite foods so that I could eat them without realizing it. Now, I like most vegetables, but what goes around comes around. My son doesn’t eat a lot of vegetables. He’s not as picky as I was as a child, but I want him to eat more veggies. I know he likes a crunchy texture and a sweet flavor. 
So, I made these crunchy green beans, just like his favorite flavor. It was a success! My son kept eating them as if he were eating chips! My husband liked them too. So, this recipe is perfect for side dishes, snacks, or lunchboxes. I usually make a large portion, put it in a container, and store it in the refrigerator. We usually finish them in a few days. The key to successful green beans is for them to be slightly browned and “crunchy.”
Once in a while, I was multitasking and cooked them longer than I was supposed to, and they got really soggy. Of course, my son didn’t eat much. But it’s okay; we all learn from our mistakes, right? Now, I always cook them perfectly until they’re crispy.

I found out that if I boil the green beans a little bit before sautéing or frying them in the pan, they cook faster and become easier to get that crunchy texture. I normally like to cut the beans to about 3 to 4 inches, but sometimes I leave the long green beans. When my son finds long ones, he brags that he got a long one, as if he were a lucky boy. 😊 So, it’s kind of fun to keep the long green beans. There’s no strict rule, so you can cut them to the size you prefer. However, if you’re trying this recipe for the first time, cutting them to 3 to 4 inches is a good starting point.

I’ve provided measurements for the ingredients, but feel free to adjust the portions if you prefer a sweeter or saltier taste. When you add more, just do it a little bit at a time. Also, my husband is allergic to oysters, which is why I use hoisin sauce, but you can use oyster sauce instead.

Instructions:

  1. Wash the green beans and trim off the edges.
  2. Chop and mince 2 to 3 garlic cloves.
  3. Fill a 12 inch pan with about 2 inches of water and bring it to a boil. Once it’s boiling, add the green beans and boil for 90 seconds.
  4. Drain the water and add some oil to the pan. Turn on the stove and once the pan is hot, add the minced garlic. Stir for a minute, then add the green beans. Sprinkle with a pinch of salt and pepper, and stir.
  5. Add garlic black bean sauce, hoisin sauce, and sugar. Stir the mixture. Do not stir for a few minutes to allow the beans to slightly brown and become crispy. Once some beans have turned brown, stir and repeat the process for the beans that are not brown yet.
  6. Stir well until all the ingredients are evenly mixed with the green beans. Taste the dish and adjust the seasoning if necessary. In my case, I added a little bit of soy sauce.
