From Picky Eaters to Pickled Peppers: A Mom’s Sneaky Strategy for Veggie Victory

So, as a mom, you know the struggle of getting kids to chow down on their veggies, right? My little guy gives some a try, but I’m on a mission to get him loving them more. Gotta be sneaky with it, just like my mom was with me. Funny how things come around like that.

Anyway, one day he actually liked a mini sweet pepper – success! But he doesn’t gobble them up regularly. I bought a bunch from Trader Joe’s, and you know how they go bad fast. So, I got inventive and turned them into pickles.
Stuffed ’em all into a strawberry jam jar, and usually, I’m done with them in a week or two, tops. Over time, they change up in texture and taste.

Now, the cool thing about these sweet pepper pickles is they’re like magic. They’re sweet, which means they’re an easy sell for kids (and adults too, if we’re being honest). Toss ’em in salads, stack ’em in sandwiches, mix ’em in pasta – they’re pretty much good anywhere. And get this, they’re light on calories, which is a bonus for anyone watching what they eat. Plus, they pop with color, adding some pizzazz to the table.

  1. After washing the mini sweet peppers, cut them and remove the seeds. Once they are cut, place them in a clean empty jar.
  2. Fill a pot with water and bring it to a boil. Add sugar, salt, vinegar, and bay leaves to the pot and mix. (You can use your preferred vinegar, such as apple cider vinegar, rice vinegar, or balsamic vinegar.)
  3. Once the mixture from step 2 has cooled down, pour it over the peppers from step 1. Even if the water fills about half of the jar, it’s not an issue because the peppers will release some liquid.

This is a salad featuring the pickles. Combining parsley, cilantro, tomatoes, onions, quinoa, corn, and feta cheese, simply add the pickles. Pour in the juice from the pickle jar, drizzle with olive oil, and voila – it’s ready! It’s a straightforward yet remarkably delectable dish, so don’t hesitate to give it a shot.
